Eggplant burgers & homemade steak fries!

 My parents came to visit so I made us my favorite go-to burger. Eggplant Burgers are so easy and fast to make!
They take little time and the best part is they are meat-free. My mom couldn't have her burger without fries so I showed her how to make her own steak fries at home.
Dinner was extremely tasty and the best part is that my family enjoyed every bite :)

Eggplant burger patty:
 
take an eggplant wash and cut the edges off.
cut the eggplant in half and then cut skin off
once all the skin is removed cut into slices about 1inch thick.
place patties on a  plate and microwave for 2minutes tops 
(average cooking time may differ depending on microwave)
while you are waiting on them so semi-cook in the microwave set up your pan on the stove top and drop about 2 Tablespoons of butter
(earth balance is an excelent vegan choice)
then add your choice of seasoning and put on low-medium heat.
once the patties are done in the microwave place patties in the heated pan to fry to make outsides a little crispy.
Flip after two minutes all the seasoning may be on the top now but that's what you want it to look like. Fry on the opposite side another 2 minutes then it's done.

Prepare your bread of choice. Dress your burger and then it's perfect!

I used slider buns since the eggplant shrinks while cooking.
I toasted the buns and put humus as my spread on the bread.
I put a vine ripe tomato slice and a few cut orange bell peppers, some kale and it was divine!

Homemade steak fries

Start with  a few plain potatoes, wash them and cut them into steak frie slices.
(I personally keep the skin on, but it can be removed or done to your liking)
After cutting into fries place on a plate and microwave them for about 3 minutes.
Microwave them one potato at a time. Once they are semi cooked place them into a bowl of cold water. Let them soak for atleast an hour.While the fries are soaking prepare your liquid batter.
Use a medium sized bowl place 1 cup of flour, put in 1/4 cup of seasonings, ( i used adobo seasoning and parsley) add 3/4 cup of water, wisk until no clumps are in the bowl.
Add fries to the batter mix. In a large skillet fill with 1 1/2 inch deep of oil and heat on medium heat. Place fries one at a time into the oil and once skillet is full without the fries touching let cook until golden brown; about ten minutes.
Carefully remove fries out of the oil one at a time, starting with the first one you place in the pan. Place hot fries on a serving dish with a paper towel to soak up any extra grease. Once you have all fries on the plate sprinkle with a few more shakes of seasoning and then allow to cool and enjoy!
